Last week was pretty tiring, pretty much every waking minute I was cooking, baking or packing photos. We’ll skip over the fact that I actually spend a large portion of my time dancing while in the kitchen and I was also re-watching supernatural while I was packing photos but it was still a lot of late nights and it shows, it looks like I’ve been punched in both eyes with a fat lot of no sleep.
I managed to spend a lot of time starting things and not having time to finish them, my mid week bake was a flop and just fell apart, literally, some ended up on the floor...and then I accidently trod in it, yes it was one of those kinds of weeks. I mean it tastes bloody fantastic, although we might be eating it for about a week, it just didn’t withstand gravity or the test of time, I’ll explain what actually happened when I brave re-making it and get it right but I was not all too pleased that my day of slaving in the kitchen was a waste.
Thankfully all the orders are finished; printed, packed and given back to the schools, apart from the last few straggler orders but I’m just ready to curl up with a coffee, copious amounts of cookies and watch action films for about a week, if only I had the time to do that.
1 tbsp + 1 tsp pumpkin puree
3 tsp light brown sugar
1/3 tsp pumpkin pie spice mix
1 cup of milk, I used soy
drop of vanilla
small pinch of salt
1 espresso shot/1tsp instant coffee made up with hot water
Place the pumpkin sugar and spice mix in a saucepan and heat until fragrant. Slowly add in the milk, vanilla and salt and bring to a slow simmer. Meanwhile make the coffee. Once the milk mixture is hot if you have time transfer to a blender and mix until slightly frothy, if not you can skip this step. Pour the milk over the coffee and top with whipped cream (optional) and more pumpkin pie spice mix.
Makes 1 portion
I make my own pumpkin pie spice mix as it's not readily available in this country so if you're in the same boat or have run out and have other spices whhy not try making your own
1 1/2 tsp cinnamon
3/4 tsp ground ginger
3/8 tsp nutmeg
3/8 tsp allspice/cloves
