Apple, Yogurt & Sweet Breadcrumb Layered Dessert

Can we take a second to appreciate those layers, I feel like a child that went to the isle of wight or somewhere and came back with one of those multicoloured sand layer thingies, can you still make those? I made way too many breadcrumbs when I was making the salmon macaroni cheese, enter this glorious dessert. I’ve been meaning to make this for a while so this is kind of the perfect opportunity. Growing up we weren’t really a dessert after dinner kind of family unless it was a special occasion and on apple day, I’m not even entirely sure when that is or how my mum always knew when it was, this is what we had for dessert. It’s ridiculously simple, healthy and so easy to make but do not underestimate it, I haven’t eaten this in years but now I’ve rediscovered it I could eat this every day.
For the apple sauce
2 cooking apples
1 tbsp water
1 tbsp honey/agave syrup
You will also need
2oz breadcrumbs (about 2 slices worth)
1-1 ½ tbsp demerara sugar
Greek/dairy free yogurt
First peel and slice the apples and place in a saucepan with the water, heat on low with the lid on stirring occasionally. Once the apples have mushed down into a sauce take off the heat and stir in the honey then set aside to cool.
While the apple sauce is cooling spread the breadcrumbs out onto a baking tray and place in the oven at about 180C/350F/Gas 4. Cook the breadcrumbs until they've crisped up which should take about 5 minutes, it's best to watch them and stir them every couple of minutes to ensure they don't burn. Once the breadcrumbs have crisped up take them out the oven, once cooled add the sugar and mix until evenly combined.
To assemble, in a glass, layer the apple sauce, yogurt and breadcrumbs until the glass is full and serve immediately so the breadcrumbs don't have time to soften.
