Are you a fan of raw vegetables? There's usually two types of people, the ones who are all up for the raw veggies and the ones that are pretty apprehensive, courgette is definitely a good one to start with.
This is one of those recipes that proves that the simple things can be just as tasty as the complicated. It's super quick and easy to whip up and if you're anything like us these ingredients will most likely already be in the fridge if you want a quick dinner idea.
You will need ½ onion 1 clove of garlic Sun dried tomatoes 1 tbsp olive oil 1 Courgette |
Side note I originally planned this recipe to have feta cheese on top, I'll be honest, I forgot to add it on. I was really busy at the time and it just slipped my mind, it tastes incredible without it but you could add it, a little protein and calcium. You could also add chicken or use this as a side dish/salad. |
Finely chop the onion, garlic and sun dried tomatoes. Heat a small saucepan and pour in the oil, add the chopped vegetables and cook. While the onion tomatoes and garlic are cooking slice the courgette into ribbons and place on a plate. Once the onion has softened and turned golden, pour onto the courgette ribbons and eat.
