Honey Nut Crunch Granola with Chocolate (processed sugar free)
My favourite granola ever is tesco's honey nut clusters with chocolate, it's addictive. I could sit down in the morning and eat the whole box of this stuff and I'll be honest usually I eat 2 bowls every time. I've kind of vowed to myself that I won't buy it accept on special occasions so I thought I'd take a stab at making my own healthier version.
200g/7oz/ 1/2 cup + 1 1/2 tbsp of honey
4 tbsp/50g of coconut oil
85g/3oz/3 tbsp (heaped) of peanut butter
280g/10oz/3 1/4 cups of rolled oats
55g/2oz/2 cups of cornflakes
30g/1oz/1 cup of rice krispies
15g/ 1/2oz/ 1/3 cup of dessicated coconut
30g/1oz/ 1/4 cup of chopped raw peanuts
Chocolate flakes/chips/curls to serve
Pre-heat the oven to 180C/350F/Gas 4
Heat the honey and oil in a large pan and let boil for 20 seconds, take off the heat and quickly whisk in the peanut butter, add in the rest of the ingredients and stir until evenly coated.
Spread the mixture onto 2 large baking trays and bake for 15-20 minutes until golden brown stirring halfway through. Make sure you watch it to insure it doesn't burn.
Let the granola cool completely on the tray.
Add chocolate flakes/chips and serve with milk or yogurt
Lasts about 3 weeks in an airtight container, keeps best if you add the chocolate before serving rather than in the mix.
