Peanut butter oatmeal cookies (sugar free)
Original recipe from Healthy family cookin
Ingredients
115g/ 1/2 cup butter/margarine
170g/ 1/2 cup honey/agave syrup
1 egg
1 tsp vanilla
250g/ 1 cup peanut butter
150g/ 1 1/4 whole wheat flour
85g/ 1 cup of rolled or porridge oats
1 tsp baking soda
Preheat the oven to 180C/350F/Gas mark 4
Mix the butter and honey until well combined. Add the egg, vanilla and peanut butter and beat until smooth. Slowly add the flour, oats and baking soda until fully incorporated.
Scoop the batter onto a baking sheet. Keep in balls or flatten with a fork.
Bake in a preheated oven for 10-12 minutes or until slightly browned.
Makes about 25
Tip: if you don't want to make a whole batch weigh and split your egg in half and make half a batch.
