Nutella energy bites
I was obsessed with making energy bites last winter, I'd eat them instead of chocolate. I'd only ever made chocolate flavoured ones once and they were amazing but it was so long ago and I seem to have no recollection of the ingredients or where I got the recipe from...or if it was even a recipe. They'll always be a fond memory, maybe I'll remember one day but for now let's have some nutella balls instead.
Original recipe by Pickles & Honey
130g/ 1 cup raw hazelnuts
175g/ 1 cup pitted dates/prunes
30g/ 1/3 cup rolled oats
25g/ 3 tbsp cocoa powder
1 1/2 tsp vanilla extract
2 tsp water/honey
Preheat the oven to 180C/350F/Gas mark 4
Spread the hazelnuts on a baking tray and place in the oven for 8-10 minutes until fragrant. Be careful not to let them burn.
Allow the nuts to cool, once cooled remove the most of the skin by rubbing them with a tea towel.
Place the hazelnuts in a food processor and blend until fine crumbs. Remove 15g/ 1/8th of a cup of the ground hazelnuts and set aside in a small bowl
Add the dates/prunes, oats, cocoa powder and vanilla to the food processor with the hazelnuts and blend until the mixture forms a ball.
If the mixture is too dry and wont come together add water or honey (depending on if you want to add more sweetness) a teaspoon at a time until the mixture comes together.
Roll the mixture into balls with your hands then roll in the left over ground hazelnuts.
Store in the fridge. Makes about 16 depending on size.
Note: you can skip roasting the hazelnuts to make these raw however they'll taste less nutty
