This is a really simple recipe, I'm sure you've seen numerous recipes of energy balls floating around the internet and if you have never tried them I'd urge you to. I remember the first time I tried making these about a year and a half ago and I was amazed at how tasty they were, I would actually eat them instead of chocolate they were so tasty and they're full of goodness, what's not to love? I'll have to dig that recipe up and post it on here eventually but as I'm on a S'mores everything kick I figured why not make energy balls a little more interesting. Now you can enjoy the yumminess of S'mores and all the healthy goodness of the balls. They'd also make great snacks for kids.
14 pitted dates/prunes
2 tsp vanilla extract
20g unsweetened cocoa powder (1/4 cup)
45g roasted peanuts (1/2 cup)
45g sunflower seeds (1/2 cup)
2 tsp honey/agave syrup
a handful of mini marshmallows
crushed digestive biscuits/graham crackers
Put all the dates/prunes, vanilla, cocoa powder, peanuts, sunflower seeds and honey in a food processor and blend until evenly combined. Slowly add water while the food processor is running until the mixture starts sticking together.
After the mixture is combined and sticky roll them into truffle sized balls and place a small marshmallow in the centre of the ball then roll the ball in the crushed biscuits and refrigerate.
You may need to add more or less honey depending on personal taste and you can substitute the nuts for any other nut depending on allergies or preference. You could leave the biscuits in larger pieces to give them more of a crunch and you could even use large marshmallows to make giant balls.
